Aarhus-based foodtech startup Nocla has acquired Nordic Koji Co, a leading producer of naturally fermented umami paste. The acquisition gives Nocla access to Nordic Koji Co.’s popular product category, which includes the versatile miso, a fermented umami paste that has gained great recognition in professional kitchens since the company was founded in 2021.

“The acquisition of Nordic Koji Co. is a natural extension of our existing product line. With this acquisition, we can bring a wider range of fermented flavors to the market in a short time. We are excited to bring Nordic Koji Co.’s innovative products to a much wider range of professional kitchens,” says Nocla CEO Morten Ammentorp Nielsen in a press release.

Moving production to East Jutland

As part of the acquisition, production will move from Copenhagen to Nocla’s factory in Grundfør near Aarhus. The move will enable Nordic Koji Co. to produce its products on a larger scale and at a price that is more attractive to professional kitchens.

Since its establishment, Nordic Koji Co. has been known for its high quality and innovative approach to fermentation. With Nocla as the new home for Nordic Koji Co.’s miso brand, the ambition is to maintain this position and bring the products to even more kitchens.
